Catfish au Lait

Ingredients

  • 1 can (12 oz.) evaporated milk
  • 1 t. Old Bay seasoning for seafood
  • 1/2 t. black pepper
  • 1 t. salt
  • 1/2 t. onion powder
  • 4 catfish fillets

Preparation

Step 1

Combine the milk and seasonings in an electric skillet; cover and bring to a simmer. Add the fish to the liquid, spooning some of the liquid over the fillets. Reduce the heat to low, around 140 to 145 degrees. Cover the skillet and poach for 6-9 minutes.
