Classic potato salad

Ingredients

  • 2 lbs russet potatoes (or reds if you prefer)
  • 2 Tbs cider vinegar
  • 1/2 tsp salt
  • 2 C mayonnaise
  • 2 scallions, chopped
  • 1 celery stalk, chopped
  • 1 Tbs Dijon mustard
  • 1 Tbs vinegar
  • 1 tsp sugar
  • And salt to taste

Preparation

Step 1

Boil, peel and cube the potatoes; toss with vinegar and 1/2 tsp salt. Mix mayo, scallions, celery, mustard, vinegar, sugar and salt. Toss with potatoes, serve.
