Tortellini with Raisin Butter

  • 2 pkgs(7 oz ea) meat filled tortellini
  • 4 tbsp butter (1/2 stick)
  • 2 tsp veg oil
  • 8 oz mushrooms, sliced
  • 1/4 cup pine nuts
  • 1/4 cup raisins

Preparation

Step 1

Cook tortellini until tender. Microwave butter until melted. Heat oil over med heat in pan, cook mushrooms until they release their juices, 5-6 min. Wipe skillet w/ towels, pour only top yellow butter off dish into pan. Cook butter 5 min until golden brown, add pine nuts until toasted (1 min), stir in mushrooms and raisins.
