Swordfish Steaks with Mint & Garlic

Ingredients

  • 4 lbs swordfish steaks, @ 1/2" thick
  • Salt & pepper
  • 1 C olive oil
  • 8 cloves thinly sliced garlic
  • 1/2 C white wine vinegar
  • 1/2 C packed mint leaves

Preparation

Step 1

Season swordfish with salt & pepper. Heat oil in 2 pans til shimmering. Add swordfish in single layer along with garlic & vinegar. Cover & cook over mod-hi heat till opaque throughout,@ 5 min. Add mint leaves & cook til wilted. Pour pan juices over swordfish to serve.
