Mom's Broccoli Cheese Soup

Ingredients

  • 1 1/2 lb. fresh broccoli
  • 1 pt. half and half
  • 2 c. water
  • 1 lb. Velveeta cheese
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. cornstarch mixed with 1 c. cold water

Preparation

Step 1

Steam broccoli. Put half and half, water, cheese, salt and pepper in a double boiler. Add broccoli. Mix cornstarch and water in a bowl. Stir into cheese mix and heat until thickened.
