Pasta w/Goat Cheese & Basil Oil

Ingredients

  • 12 oz of short pasta (like gremelli)
  • 3 c. fresh basil leaves
  • 1/2 c. olive oil
  • 4 oz goat cheese
  • 1/2 tsp kosher salt & fresh ground pepper

Preparation

Step 1

Cook pasta according to directions on package. Return drained pasta to pan. Purée 2 cups of basil w/olive oil in blender until smooth. Pour through a fine mesh sieve & discard the solids. Toss the pasta w/the basil oil, goat cheese, remaining basil leaves, salt & pepper.
