Ingredients
- 1 pound sweet potatoes or yams
- 2 tablespoons honey or sugar
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon pepper
- 1/8 teaspoon turmeric
- Several saffron threads, crumbled
- 2 cups water
- 1/3 cup raisins
Preparation
Step 1
1. If using the raisins, cover them with boiling water and allow them to soak while the sweet potatoes are cooking.
2. Peel the the sweet potatoes and cut into 1/2" cubes.
3. Wash, drain and put the cut-up potatoes in a pot.
4. Add the butter, honey, spices and 2 cups of water.
5. Bring to a simmer, cover, and cook for about 8 to 10 minutes, or until the sweet potatoes are tender but still slightly firm.
6. If using the raisins, drain them and add them to the pot.
7. Gently stir.
8. Continue simmering the sweet potatoes, uncovered, to reduce the sauce until it has a thick, syrupy consistency.
9. Remove the salad from the heat and allow it to cool to room temperature before serving.
