Ingredients
- 1 cup shortening
- 1 cup sugar
- 1 cup brown sugar, packed
- 2 eggs
- 3/4 t almond extract
- 2-1/2 cups all purpose flour
- 1 t baking soda
- 1 t salt
- 2-1/2 cups flaked coconut
- 3/4 cup chopped almonds
- 1 jar (16 oz) maraschino cherries, drained and halved
Preparation
Step 1
In a large bowl cream shortening and sugars. Add eggs one at a time. Beat in extract. Combine flour, baking soda and salt and gradually add to the creamed mixture. Mix well. Stir in coconut and nuts.
Drop by rounded teaspoonfuls 2 inch apart on parchment paper lined cookie sheets. Place a cherry in the center of each. Bake at 350 for 12-14 minutes or until lightly browned. Remove to racks to cool.
