Ingredients
- 15 lbs tomatoes
- 1 1/2 tbsp dried basil
- 8 tsp lemon juice-divided
- 4 tsp salt- divided
- 8 pint jars
- 8 rings and lids
Preparation
Step 1
Wash and core tomatoes.
Place tomatoes in boiling water for 2-3 min, then remove skin.
Quarter tomatoes.
Place 4 cups of tomatoes in large pot and crush.
Bring tomatoes to a boil, then add the remaiing tomatoes to the pot.
Bring to a boil, then simmer, uncovered for 2 hrs.
Stir occasionally.
Remove from heat and stir in basil.
Sterilize jars.
Add 1/2 tsp salt and 1 tsp lemon juice to each jar.
Fill jar with hot tomatoes.
Wipe edge of jar and cover with sterilized lids and rings.
Finger tighten rings and place in boiling canner.
Process for 30 minutes
