Italian-Seasoned Roast Chicken Breasts

Ingredients

  • 1 TB. chopped fresh rosemary
  • 1 tsp. grated lemon peel
  • 2 TB. fresh lemon juice
  • 4 tsp. extra virgin olive oil
  • 1/2 tsp. fennel seeds
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3 cloves garlic, minced
  • 4 bone-in chicken breasts

Preparation

Step 1

Preheat oven to 425. Combine first 8 ingredients in a small bowl. Loosen skin from chicken by inserting fingers between skin & meat. Rub rosemary mixture under skin & over top of skin. Place chicken, bone side down, on a broiler pan coated with cooking spray. Coat chicken lightly with cooking spray. Bake at 425 for 45 to 55 minutes.
