- 3.5 OUNCE INSTA CURE #1 BY WEIGHT
- 1/3 CUP ORANGE BLOSSOM HONEY AND MOLASSES MIX
Preparation
Step 1
POUR SUNNY DELIGHT INTO A LARGE PLASTIC CONTAINER, POUR IN INSTA CURE AND HONEY / MOLASSES MIXTURE MIX THOROUGHLY, REMOVE ANY FOAM FROM TOP.
TRIM AND EXCESSIVE FAT FROM PORK LOINS AND PLACE IN TUPPERWARE TYPE CONTAINER, POUR CURE OVER LOINS, COVER WITH LID AND PLACE IN FRIDGE,, LET SET FOR 6 TO 7 DAYS,, REMOVE FROM FRIDGE RINSE LET AIR DRY.
SMOKE AT 225 F WITH APPLE OR MAPLE WOOD FOR NO MORE THEN 4 HOURS, CONTINUE TO COOK AT 225 F TILL AN I.T, OF 145 - 150. REMOVE FROM SMOKER LET COOL THEN PLACE BACK IN FRIDGE TO FIRM UP OVER NIGHT. SLICE AS THIN AS YOU CAN. GREAT ON SANDWICHES
