Cream of Broccoli

Ingredients

  • 4 Tablespoons butter
  • 1 onion, chopped
  • 2 stalks of celery, minced
  • 4 c. chicken broth
  • 2 c. water
  • 2 bunches of broccoli
  • 1 potato, chopped
  • 1/2 c. half and half
  • 1/2 t. salt
  • 1/4 t. pepper

Preparation

Step 1

Saute onion and celery in butter until soft, about 5 minutes.

Add chicken broth, water, chopped broccoli and chopped potato. Simmer for 20 to 25 minutes until vegetables are cooked. Cool completely.

Puree soup.

Reheat the soup and stir in the half and half, salt and pepper.
