Ingredients
- 1 box yellow cake mix
- 1 can 8oz. crushed pineapple
- 2 pkg 8 oz cream cheese, softened
- 1/2 cup sweetened cream of coconut
- 2 T rum
Preparation
Step 1
350*.. prepare cake according to directions, stir in pineapple.. divide batter evenly among 3 greased and floured 8" round cake pans.
bake 18 min or til toothpick comes out clean. let cakes cool in pans on rack for 15 min.. invert onto racks and continue to cool.
in bowl, beat at med speed remaining ingred. 1 min until light and fluffy.. chill 30 min. assemble and frost layers with rum mix
