Sauteed Carrots

Ingredients

  • 2 t. vegetable oil
  • 3 c. grated carrots (6 medium carrots)
  • 1/2 t. ground ginger
  • 1/2 c. orange juice
  • 1/4 t. salt
  • Pepper to taste

Preparation

Step 1

Heat oil in a large skillet over medium heat. Add carrots. Cook, stirring often until wilted, about 2 minutes. Stir in orange juice, ginger, salt and pepper. Simmer uncovered until the carrots are tender and most of the liquid has evaporated, 2 to 3 minutes.
