Baked Mashed Potatoes with Bread Crumbs and Cheese

Ingredients

  • 1 tbsp butter
  • 4 lbs russet potatoes cut in 1 inch pieces
  • 1 cup whole milk
  • 1 stick butter melted
  • 1 1/2 cups shredded mozzarella
  • 1 cup fresh grated Parmesan
  • Salt and pepper
  • 2 tbsp bread crumbs

Preparation

Step 1

1. Preheat oven to 400 degrees
2. Coat 9x13 pan with 1 tbsp butter
3. Cook potatoes until tender - about 15 minutes. Drain; return to pot and mash, mixing in milk and melted butter
4. Mix in the mozzarella and 3/4 cup Parmesan. Season with salt and pepper. Transfer potatoes to baking dish
5. Stir together bread crumbs and 1/4 cup Parmesan. Sprinkle over potatoes. (can be made up to 6 hrs prior-cover and chill)
6. Bake uncovered until topping is brown - about 20 minutes
