Bread - Lemon Blueberry Bread

Ingredients

  • 1 1/2 c flour
  • 2 t baking powder
  • 1/2 t salt
  • 1 c plain yogurt
  • 1 c sugar
  • 3 eggs
  • 2 t lemon zest
  • 1 t. vanilla
  • 1/2 c oil
  • 1 1/2 c blueberries
  • Lemon syrup: 1/3 c sugar, 1/3 c fresh lemon juice-dissolve sugar and cook 3 min. more
  • Lemon glaze: 1 c powdered sugar, 3-4 T fresh lemon juice

Preparation

Step 1

Preheat 350
Mix flour, baking powder, and salt in sm bowl.

Mix yogurt, sugar, eggs, lemon zest, vanilla and oil.

Slowly add dry to wet. Add 1 T flour to blueberries then fold into mixture. Pour into prepare 9 x 5 pan. Bake 55-65 minutes.

Poke holes in bread top and sides. Brush on lemon syrup till gone.

Mix lemon glaze. Cover read and let harden before cutting.
