Ingredients
- 1 c. cornbread stuffing crumbs
- 1 can corn (drained)
- 1 can diced green chilies (drained)
- 1 c. shredded Monterey Jack cheese
- 1 c. shredded Cheddar cheese
- 2 T flour
- 3 eggs (beaten)
- 1 can evaporated milk
- Crushed corn chips, tortilla chips or avocado (optional)
Preparation
Step 1
Preheat oven to 350 degrees. Spoon crumbs evenly on bottom of a 2 quart baking dish. Mix corn with chilies, cheeses, and flour. Spoon over crumbs. Combine eggs and milk and pour over corn mixture. Bake 35-45 minutes or until set. Garnish with corn chips, tortilla chips or avocado if desired.
