Tomatoe Pie

Ingredients

  • Sliced tomatoes
  • Chopped onion
  • Grated cheese
  • Mayo (optional)
  • salt and pepper
  • pie crust (optinal)
  • Bisquick (optional)

Preparation

Step 1

Slice tomatoes into a colander with some salt, let drain
until some of the juices run out.
Layer tomatoes, onions, cheese, salt and pepper until pie pan full. Can spread mayo on top and bake as is for 25-30 min. OR can first pre bake a pie shell for 10 mins or so, then layer as before and omit the mayo (or not.)
OR can layer all in pie pan and mix up a bisquick crust
as for one of those "impossible" pies and layer that on top of the tomatoes and bake. I got this from a friend
who says she does it different every time and it's always good! I made 3 or 4 times late last summer with just the mato on top or the bisquick crust and they were both delicious.
