Ingredients
- Vegetable oil for frying
- 2 cucumbers, sliced about 1/4 inch (5 mm) thick
- 1 About 1 cup (250 ml) cornmeal
- Salt to taste
Preparation
Step 1
Pour vegetable oil into a large, heavy pot over high heat to a depth of about 3/4 inch (2 cm). Heat it to a temperature of 350F (180C). Roll the cucumbers in the cornmeal and fry in batches until golden brown on both sides. Drain on paper towels and sprinkle with salt while still hot. Serves 4 to 6.
