Chicken Noodle Soup

Ingredients

  • 1 chicken breast (3/4 cup)
  • 1/4 cup finely chopped shallots
  • 4 cup water
  • 2 - 1/2 cup chicken broth
  • 1/2 cup diced celery
  • 1 - 1/4 tsp salt
  • 1/8 tsp majoram
  • 1/8 tsp thyme
  • 3 oz egg noodles
  • pepper to taste

Preparation

Step 1

1. Brown chicken for 5 minutes.
2. Remove chicken. Add shallots & stir a minute under medium heat.
3. Return chicken to pot & add additional ingredients (except noodles).
4. Bring to boil & then reduce heat to low simmer until chicken is tender.
5. Remove chicken & dice.
6. Return chicken to pan. Add noodles & cook until done.
