Ingredients

  • 4 lg. Chicken breast halves, boned & skinned
  • 1 Tbsp Dijon mustard
  • 4 slices lean cooked ham
  • 1 Tbsp grated Parmesan cheese
  • 2 slices Swiss cheese
  • 1/4 cup bread crumbs
  • 4 Tbsp melted butter

Preparation

Step 1

Clean & pound chicken so that it is about 1/4 inch thick. Spread mustard on inside of chicken. Place a slice of ham and 1/2 slice of Swiss cheese on chicken. Roll up like a jelly roll & secure with a toothpick. Combine bread crumbs and Parmesan cheese. Dip chicken in melted butter & roll in bread crumbs. Place chicken in baking pan and bake at 400 for 10 minutes, reduce heat to 350 and cook 25 minutes or until chicken is done.
