Potato Soup from Wintergreen Resort

Ingredients

  • 1/2 large onion diced
  • 1/2 cup diced bacon
  • 1/2 cup diced potatoes, peeled
  • 1 cup diced celery
  • 1 cup shredded cheddar cheese
  • 1 qt chicken stock
  • 1 qt milk-warmed
  • fresh chives
  • black pepper and salt

Preparation

Step 1

1. saute bacon till brown and add onion and celery. simmer till tender and add potatoes and stock.

2. cook till potatoes are done and add milk. cook 5 minutes and whisk in cheese and chives, add pepper. and salt.

3. simmer 5 minutes.
