- 3 sweet potatoes (about 1 1/2 lbs)
- 1 teaspoon butter
- 1 teaspoon brown sugar
- 1/8 - 1/4 teaspoon ground red pepper
- salt
- 1/4 cup walnuts, toasted
- 2 Granny Smith apples, cored and diced
- 1 teaspoon lemon juice
- 1 tablespoon chopped chives
- freshly ground pepper
- 1 tablespoon olive oil
Preparation
Step 1
1. Preheat oven to 350 degrees F. Bake sweet potatoes on an aluminum foil-lined baking sheet 35-45 minutes until potatoes are tender and skin is crisp; set aside.
2. Melt butter in a small saucepan; stir in brown sugar, red pepper, salt to taste, and walnuts. Cook over medium-high heat, stirring often, until mixture caramelizes. Remove nut mixture to a parchment paper covered wire rack; cool completely. Break into pieces.
