Tortellini w/Spinach and Tomatoes in Cream Sauce

Ingredients

  • 2 lbs cheese tortellini
  • 1 lb bacon, cubed, cooked, and drained
  • 1 pint grape tomatoes, halved
  • 2 tsp olive oil
  • 1 bag (3 cups) baby spinach leaves
  • 2 tsp minced garlic
  • 1 cup heavy whipping cream
  • 1/2 cup Parmesan cheese, grated

Preparation

Step 1

Cook tortellini until tender. While tortellini is cooking, make sauce. In a deep skillet, heat olive oil over medium heat. Add bacon and spinach to pan and cook, covered, until spinach is wilted. Add garlic and tomatoes and cook until tomatoes start to turn soft. Reduce heat and add cream and Parmesan cheese. Continue simmering until sauce thickens. Stir in tortellini and top with more Parmesan cheese..
