Pineapple Casserole

Here's a more friendly recipe. It doesn't have all the butter and crackers. I've made it for years and it goes well with pork or ham.
When I ran it thru the recipe analyzer without the 1/2 cup cheese on top (I forgot to put it in) it came up 206 calories, 1.4 fat, 51.4 carb, 2.2 fiber, 5.9 protein.

Ingredients
- 3 (20 ounce) cans chunk pineapple
- 1 (20 ounce) can crushed pineapple
- 1 cup low fat cheddar cheese
- 1/2 cup flour
- 1 cup sugar or splenda
- 1/2 cup low fat cheddar cheese for topping
Preparation
Step 1
Oven 325 degrees. Drain pineapple and measure 3 cups of juice, discard any remaining. Mix flour, sugar and juice gradually, set aside. Mix cheese and pineapple, place in baking dish, cover with juice mixture and last 1/2 cup cheese. Spray top with butter flavor cooking spray. Bake 1 hour.
