Blueberry Graham Cheesecake Oatmeal

Ingredients

  • 2 1/2 cups skim milk
  • pinch salt
  • 2 cups quick-cooking oatmeal
  • 1/2 tsp vanilla extract
  • 1/4 cup agave nectar
  • 1/2 tsp lemon zest
  • 1 cup fresh or frozen blueberries
  • 1/4 cup reduced=fat cream cheese
  • 1/4 cup nofat Greek yogurt
  • 2 squares graham crackers, crushed

Preparation

Step 1

1. Heat a medium saucepan over medium-high heat. When hot, add the milk and salt, if desired, and bring to a boil.

2. Add the oatmeal, vanilla, agave, lemon zest, blueberries and cream cheese. Stir until combined. Cook until the oatmeal has thickened, about 1 minute. Remove from heat and stir in the yogurt.

3. Serve the oatmeal in bowls, and sprinkle the crushed graham crackers on top.
