Ingredients

  • Crust:
  • 1 C all-purpose flour
  • 3 T powdered sugar
  • 1/2 C butter softened
  • Filling:
  • 2 eggs, beaten
  • 1 C sugar
  • 1/4 C flour
  • 1/2 tsp baking powder
  • 3/4 C chopped walnuts
  • 1/2 C sweetened shredded coconut
  • 1/2 C maraschino cherries, drained & quartered
  • 1 tsp vanilla
  • 1/4 tsp salt

Preparation

Step 1

Preheat over to 350o
Prepare crust; combine flour, sugar and butter in a medium bowl, mix well. Press into an 8' square
pan. Bake 20-25 minutes until lightly golden.
Prepare filling: combine all ingredients in a large bowl, mix well. Spoon on top of crust and spread evenly. Bake 20-25 minutes, until golden brown. Cool completely on a wire rack before cutting.
