Ingredients
- 1 lemon juiced (can use 2 T lemon juice)
- 1/2 c. olive oil
- 2 T chopped oregano (can use fresh)
- 1 T chopped garlic
- 1 6 oz. package baby spinach
- 1 16 oz. box cooked bow tie pasta (drained and cooled)
- 1 7 oz. package feta cheese, crumbled
- 1 c grape tomatoes (halved)
Preparation
Step 1
In bowl, whisk together 2 T lemon juice, olive oil, oregano and garlic and set aside. In covered microwave safe bowl cook spinach in 2 T of water for 1 minute. Place in colander, rinse with cold water. In bowl combine spinach and pasta. Drizzle with oil mixture and toss to combine. Stir in cheese and tomatoes.
