Chicken Fizzy with lemon vinaigrette, parmesan rice

Ingredients

  • Vinaigrette:
  • 1/4 c fresh lemon juice
  • 1 tbsp. honey
  • 1 tbsp. fresh chopped chives
  • 2 tbsp. Dijon mustard
  • 1/4 c canola oil
  • can add diced tomatoes for color (optional)
  • Chicken:
  • 4 boneless, skinless chicken breasts
  • 1/4 c flour
  • 2 tbsp. canola oil
  • 1/2 c club soda
  • 1 tbsp. unsalted butter
  • 1/2 tbsp. red pepper flakes
  • Rice:
  • 1/4 c fresh grated parmesan cheese
  • 1/4 c heavy cream
  • 1 tbsp. unsalted butter; room temperature
  • 3/4 c cooked converted rice

Preparation

Step 1

Vinaigrette:
Combine lemon juice, honey, chives and mustard in a bowl. Drizzle in 1/4c oil, whisking constantly until emulsified.

Chicken:
Dredge chicken in flour and sauté in 2tbsp. oil until golden brown. Deglaze with club soda, reduce heat to medium, add 1 tbsp. butter and pepper flakes. Cover and simmer until liquid is syrupy (about 5 minutes) turning chicken to coat.

Rice:
Combine the parmesan cheese, cream, butter and cooked rice.

Serve the chicken with lemon vinaigrette and parmesan rice.
