Salmon Whip Cucumber Cups

Ingredients

  • 1/2 cup low fat cottage chesse
  • 1 Tbsp milk
  • 4 scallion - white parts only - sliced
  • 4 oz thinly sliced smoked salmon
  • 1/4 cup whipped cream cheese
  • 1 Tbsp fresh lemon juice
  • freshly ground white pepper
  • 2 large english cucumbers
  • 1 Tbsp chopped fresh chives

Preparation

Step 1

Process cottage cheese and milk in processor until smooth. Add scallions, salmon, cream cheese, lemon juice, pinch of white pepper. Process until smooth. Refrigerate at least 1 hour or overnight

Cut cucumbers 3/4 inch rounds. Discard ends. Scoop out seeds and some flesh to form a small cup

Fill each cup with 2 tsp salmon whip and sprinkle with chives.

Cover & refrigerate up to 1 hour
