Apple Nut Coffee Cake

Ingredients

  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 1 tsp. Vanilla
  • 2 c. flour
  • 1 tsp. Baking powder
  • 1 tsp. Baking soda
  • 1/4 tsp. Salt
  • 1 c. sour cream
  • 2 c. finely chopped apple
  • 1/2 c. chopped nuts
  • 1/2 c. brown sugar
  • 1 tsp. Cinnamon
  • 2 Tbsp. Melted margarine

Preparation

Step 1

Cream together shortening and sugar. Add eggs and vanilla, beat well. Sift together flour baking powder, soda and salt. Add to mixture alternately with sour cream. Fold in apple. Spread batter in greased 9x13 pan. In separate bowl, mix nuts, brown sugar, cinnamon and margarine. Sprinkle evenly over top of batter. Bake 350° for 35 to 40 minutes.
