Grilled pork and peaches

Ingredients

  • 2 thick cut pork chops
  • 2 firm peaches
  • 1/2 c crumbled feta
  • 2 t pine nuts
  • 1 small onion, thinly sliced
  • 1 t. balsamic vinegar
  • salt and pepper
  • evoo

Preparation

Step 1

1) preheat grill to high. brush pork with oil and season with salt anpepper. grill 4-5 minutes on each side. meat should be charred on outside but pink in the middle.

2) while chops cook, brush peach halves with oil and grill facedown about 5 minutes til soft. remove and slice

3) toss together peaches, pine nuts, onions, vinegar and feta. add salt and pepper to taste

4)top each chop with half the peach mixture.
