Asian Beef Noodles

You can also use lean ground beef cooked and fat drained off.

Ingredients

  • 1 lb. beef round tip steaks, cut 1/8-1/4" thick
  • 1 jalapeno pepper, seeded ans finely chopped
  • 1 tablespon vegetable oil
  • 1 pkg. (3oz.) beef flavor instant ramen noodles
  • 1/4 cup steak sauce
  • 1 med. carrot, shredded
  • 2 tablespoons chopped fresh cilantro or green onion
  • 1/4 c. chopped peanuts

Preparation

Step 1

Stack beef slices, cut into 1"x3" strips. In med. bowl, combine beef, jalapeno pepper and oil, toss to coat.

Break noodles into 4 pieces, reserve seasoning packet. Cook noodles as pkg. directs. drain.

Heat large nonstick skillet over med. high heat until hot, stir fry beef (1/2 at a time) i minute or until no longer pink, do not overcook. Remove beef, keep warm.

In same skillet combine noodles, steak sauce, carrot, cilantro and reserved seasoning packet. Cook over med. heat until hot, stirring occasionally. Then return beef to skillet, mix lightly. Sprinkle with peanuts.
