Caramel Corn

Ingredients

  • 7 quarts plain popped popcorn
  • 2 cups dry roasted peanuts (optional)
  • 2 cups brown sugar
  • 1/2 cup light corn syrup
  • 1 tsp. salt
  • 1 cup butter
  • 1/2 tsp. baking soda
  • 1 tsp. vanilla

Preparation

Step 1

1. Place popped popcorn into 2 shallow greased baking pans.
2. Add peanuts if using. Set aside.
3. Preheat oven to 250 degrees.
4. Combine the brown sugar, corn syrup, butter, and salt in saucepan.
5. Bring to a boil over medium heat, stirring enough to blend.
6. Boil for 5 minutes, stirring constantly.
7. Remove from heat and stir in baking soda and vanilla. It will be light and foamy.
8. Immediately pour over the popcorn and stir to coat.
9. Bake for 2 hours, removing the pans and stir every 15 minutes.
10. Spread popcorn on counter top covered with wax paper and separate pieces.
11. Cool completely, then store in air tight containers.
