HAND SHREDDED MEXICAN PORK

  • 3 lb pork loin, cut up
  • 1-2 T. oil
  • 2 large onions
  • 4 garlic cloves
  • 1 16oz tomatoes, diced and drained
  • 3 jalepeno peppers
  • 3 bay leaves
  • 2 T. chili pepper
  • 2 t. cumin
  • 1 t. oregano
  • 1/2 t. salt and pepper

Preparation

Step 1

brown pork, several pieces at a time in ovenproof skillet in hot oil over med. high high. reduce to med.remove pork..cookonions,garlic until tender..stir in drained tomatoes,jalepenos choped, bay, chili powder,cumin,oregano..salt and pepper and pork..325* for 2 hours in ovenproof skillet..remove pork, let cool and shredd using forks.. skim fat and return to pan
