PumpkinPi Cake

A friend and fellow teacher, Dee, gave me this recipe and it I fabulous!

Ingredients

  • 1 large can pumpkin (enough for 2 pies)
  • (**OR USE A LARGE CAN OF PUMPKIN PIE MIX AND FORGET SUGAR AND SPICES)
  • 1 13 ounce can evaporated milk
  • 4 teaspoons pumpkin pie spice **
  • 1 cup sugar **
  • 3 eggs
  • 1/2 teaspoon salt
  • 1 box yellow cake mix
  • 2 sticks of butter or margarine (melted)
  • 1 cup chopped pecans

Preparation

Step 1

Mix and beat first 6 ingredients (4, if using can pumpkin pie mix)and pour into a lightly greased 9 X 13 pan

Sprinkle box of yellow cake mix on top of mixture

Melt 2 sticks of butter or margarine and pour on top of cake mix

Sprinkle 1 cup of chopped pecans on top

Bake 350 degrees for 50 minutes.

Cool and serve in squares topp0ed with whipped cream
