Ingredients
- 1 Tnsp canola oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 lbs sweet potatoes, peeled and diced
- 1 large red pepper, diced
- 2 cans (14.5oz) diced tomatoes with juice
- 3 cups water
- 1 1/2 cups chicken stock
- 4 cups black beans, soaked over night, rinsed and drained
- 2 tsp cumin
- 1 tsp paprika
- 2 mangos, peeled, seeded and diced
- 1/4 cup chopped fresh cilantro
- 1/4 tsp salt
Preparation
Step 1
1. Put beans in pot with enough water to cover. Cook for 1-1.5 hours.
2. Heat the oil in a large pot over medium heat. Add onion and cook til tender. Stir in garlic; cook until tender, then mix in sweet potatoes, peppers, tomatoes with juice and spices. Add stock and vegetables/spice mis to beans. Bring to a boil, reduce heat to low, cover and simmer 15 mins. until sweet potatoes are tender.
3. Mix in the mango and cilantro. Season with salt to taste.
