ROASTED ASPARAGUS {barefoot contessa}

  • 2 lbs.fresh asparagus
  • Kosher salt
  • Good olive oil
  • Freshly ground black pepper

Preparation

Step 1

Preheat oven to 400°F.

Break off the tough ends of the asparagus and, if they're thick, peel them. Place asparagus on a sheet pan, drizzle with olive oil, toss to coat the asparagus completely. Spread asparagus in a single layer and sprinkle liberally with salt and pepper. Roast 15-20 minutes, until tender, but still crisp.
