Shrimp Pasta Salad

Ingredients

  • 1/2 lb. shrimp, peeled and deveined
  • 1 cup sea-shell pasta
  • 1 yellow pepper, diced
  • 1 cup pineapple tidbits, drained
  • 1 cup red seedless grapes, halved
  • 1 /c cup scallions, chopped
  • 1/2 cup celery, chopped
  • 1 cup mayonnaise
  • 4 parsley garnishes
  • 2 slices of lemon, halved
  • lettuce or endive to serve

Preparation

Step 1

Cook shrimp.

Cook pasta. Drain well.

Combine shrimp, pasta, pepper, pineapple, grapes, scallions and celery.

Add mayonnaise, S&P to taste, and toss gently to blend.

Refrigerate for several hours

Serve individually in lettuce cups or endive. Garnish with parsley and lemon slices.
