Ingredients
- 1 lb. medium shrimp, peeled and deveined
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 2 cloves garlic, crushed
- 1 Tbsp. vegetable oil
- 1 16-oz. can whole chopped tomatoes, reserving liquid
- 1 6-oz. can tomato paste
- 1 tsp. basil
- 1 tsp. oregano
- 1/4 tsp. red pepper flakes
- cooked pasta
Preparation
Step 1
In a 2 quart saucepan, cook onion, green pepper and garlic in oil until tender.
Add chopped tomatoes and liquid, tomato paste and seasonings. Cover and simmer for 15 minutes, stirring occasionally.
Add shrimp. Cover and simmer approximately 3 minutes longer, until shrimp and pink and firm.
Serve over cooked pasta.
