Lobster Chowder

Ingredients

  • 3 1-1/2 lbs. lobsters
  • 1 stick salted butter
  • 3 cups milk
  • 3 cups 1/2 & 1/2 cream
  • S&P

Preparation

Step 1

Steam lobsters until their shells just start to turn red, about 4 minutes. Do not fully cook.

Chill and remove meat from tail and claws. Sauté the meat gently in butter over medium heat, stirring occasionally to prevent burning.

Add sautéed meat to milk and cream and simmer over low heat for 30 minutes. DO NOT BOIL.

Add salt and pepper to taste. Let cool and refrigerate overnight.

Reheat gently. Garnish with parsley and paprika.
