Scalloped Potatoes

Ingredients

  • 6 red skin potatoes sliced thin
  • 1 tsp chicken base mixed into 1 cup of water
  • 1/2 C cooked bacon pieces
  • 1/2 C shredded sharp cheddar cheese
  • 2 oz cream cheese
  • salt & pepper

Preparation

Step 1

Add sliced potatoes, chicken base & water, and bacon pieces to pressure cooker. Securely lock on the lid, set to high and cook 2 minutes.

Perform quick release. Safely remove lid. and slowly stir in cheddar and cream cheese until creamy. Salt and pepper to taste.

You can substitute diced ham for the bacon.
