Ingredients

  • 1 lb. cod fillets
  • 1 cup chunky salsa
  • 1/2 cup ripe olives, sliced
  • 1/4 cup Monterrey jack cheese, grated
  • cilantro for garnish

Preparation

Step 1

Preheat oven to 400 degrees.

Lightly grease a 9x13 inch baking dish.

Place fillets in baking dish. Top with salsa and olives.

Bake at 400* for 10 minutes per inch of thickness, or until fish is close to flaky.

Sprinkle cheese over fillets during the last few minutes allowing cheese to melt.

Garnish with cilantro.
