LEMON BAKED SHRIMP

Ingredients

  • 1 cooking spray
  • 1 lb raw medium shrimp , peeled and de-veined
  • 1/3 cup Bread Crumbs, plain, grated, dry
  • 1 tsp dried parsley
  • 1/2 tsp grated lemon rind
  • 1/8 tsp salt
  • 2 medium garlic cloves , minced
  • 2 tbsp fresh lemon juice
  • 1 tsp olive oil

Directions
1 Preheat oven to 400 degrees F.

2 Coat 4 individual baking dishes with non-stick cooking spray.

3 Divide shrimp between the dishes; set aside.

4 Combine the bread crumbs, parsley, lemon rind, salt, and garlic in a bowl; stir in lemon juice and olive oil.

5 Sprinkle bread crumbs over the shrimp.

6 Bake for 15 minutes or until shrimp are done and the bread crumb mixture is lightly browned.
