French Onion Soup

Ingredients

  • 4-5 medium size onions
  • 4 tbsp butter
  • 1 tbsp flour
  • 3 cans condensed beef broth
  • 2 soup cans of water
  • 1 tbsp worcestershire sauce
  • 1/4 tsp pepper
  • 8 slice french bread 1 1/2 inches thick, cut from center of loaf
  • 1/4 cup parmesan cheese
  • 8 slices swiss cheese

Preparation

Step 1

Peel and thinly slice onions. In a large saucepan, melt butter. Add onions, slowly cook over medium-low heat, stirring often, till onions are soft and golden brown (about 25 minutes).

Sprinkle onions with flour. Cook for 1 minute, stirring constantly. Stir in broth, water, worcestershire sauce and pepper, bring to a boil. Reduce heat, cover, simmer for 20 minutes.

While soup simmers, toast french bread slices under broiler or in a toaster oven.

Stir parmesan cheese into soup, then ladle soup into individual ovenproof crocks, or pour it into a large ovenproof saucepan or soup tureen. Add toasted french bread slices to soup and top with slices of swiss cheese. Place under broiler or bake in a 400 oven for 5-8 minutes, until cheese had just melted and bubbled.
