Shrimp and Grits

Ingredients

  • 1 1/2 c. *prepared* grits
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. chopped pancetta or bacon
  • 12 large shrimp
  • 1 Tbsp. minced shallots
  • salt and pepper
  • 1/4 c. clam juice or chicken broth
  • Tabasco
  • 1/2 c. fresh spinach
  • 2 Tbsp. unsalted butter

Preparation

Step 1

Prepare grits according to package directions. Keep warm.

In a medium skillet, heat olive oil over medium heat and add pancetta/bacon. Saute until almost brown, stirring frequently, about 5 minutes. Add shrimp and shallots and saute 1 minute. Season with salt and pepper and add clam juice and two dashes Tabasco.

Simmer until liquid reduces by half, about 3 minutes, then add spinach and butter. Toss together until spinach wilts and butter is melted.

Pour shrimp mixture over grits and serve immediately.
