Spinach Manicotti

I have made this in the oven. Bake at 350* check pasta box for time.

Ingredients

  • 1 (15ox) ricotta cheese
  • 1 (10oz) frozen spinach thawed and drained
  • 1 egg, lightly beaten
  • 3/4 cup Parmesan cheese/divided
  • 1/2 cup shredded mozzarella cheese
  • 1/2 tsp salt
  • 2 (14oz) cans of stewed tomatoes with basil,oregano and garlic/chopped
  • 1 (24oz) jar of roasted garlic and herb pasta sauce/divided
  • 1 cup chopped onion
  • 1 98oz) box 14 shells of Manicotti

Preparation

Step 1

In a medium bowl, combine ricotta ,spinach and egg.1/4 cup Parmesan,mozzarella and salt. Stir to combine.


In a 5 QT Oval slow cooker combine 1 can stewed tomato. 1 cup past sauce and onion.
Fill unooked shells with spinach mix. arrange 7 shells over the tomato mix. Top shells with remaining can stewed tomatoes. arrange remaining shells over the stewed tomatoes.

pour remaining pasta sauce over the shells top with remaining Parmesan cheese.

cover and cook on low 3-4 hours
