Sausage and Red Rice *(GOOD)*

Ingredients

  • 1 (14-16 oz) package smoked sausage
  • 1/2 cup onion, chopped
  • 1/2 green pepper, chopped
  • 1 (8 ounces) can tomato sauce
  • 1 rounded teaspoon cumin
  • 1 rounded teaspoon chili powder
  • 1 cup white rice

Preparation

Step 1

In small sauce pan, fry onion, pepper, and sausage until onions are soft. Add in tomato sauce, cumin and chili powder. Cook on stove at medium heat until it starts to bubble, cut heat back to low, stir occasionally. This sauce is best if you let it simmer for at least 30 minutes.

While sauce is cooking start rice. Cook rice according to package directions or use your pressure cooker.

Next slice sausage in slices about ¼” thick or desired thickness and place in skillet.

Start warming sausage over medium about 5 minutes before serving.

To serve take an individual serving bowl and make a bed of rice then place sausage on top then spoon desired amount of sauce on top.
