Sweet Potato Corn Bread

Ingredients
- mix together dry stuff:
- 1 cup flour
- 1 cup yellow cornmeal
- 4 tsp baking powder
- 1 tsp salt
- 1/2 cup sugar
- separately mix together this wet stuff:
- 3 sweet potatoes cooked and mashed, or one 16oz can of sweet potatoes (really doesn't matter which)
- 2 eggs
- 6 tablespoons milk
- 3 tablespoons oil
Preparation
Step 1
mix dry and wet just until moist, don't beat to death.
Put into greased muffin tins and bake at 425 degrees about 15-20 minutes.
