Sweet Potato Corn Bread

Ingredients

  • mix together dry stuff:
  • 1 cup flour
  • 1 cup yellow cornmeal
  • 4 tsp baking powder
  • 1 tsp salt
  • 1/2 cup sugar
  • separately mix together this wet stuff:
  • 3 sweet potatoes cooked and mashed, or one 16oz can of sweet potatoes (really doesn't matter which)
  • 2 eggs
  • 6 tablespoons milk
  • 3 tablespoons oil

Preparation

Step 1

mix dry and wet just until moist, don't beat to death.

Put into greased muffin tins and bake at 425 degrees about 15-20 minutes.
