Ingredients
- 3 c corn kernels (fresh from 6 ears or frozen and thawed)
- 2 c peeled diced mango
- 1 c or less chopped red onion
- 1 c chopped red pepper
- 1/3 c fresh lime juice
- 2 garlic cloves, minced
- 3 Tbs fresh cilantro, chopped
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1 chipotle chili in adobo sauce, drained and chopped
- 2 15-oz cans black beans, rinsed and drained
Preparation
Step 1
Just before serving, mix all ingredients. Do not make ahead of time, as it gets mushy after a few hours.
